Onion Bhajis

Superbly crispy, tasty and fresh homemade onion bhaji.  Easy to make and everyone loves 'em!

Onion bhajis

Ingredients

1 massive onion (or 2 medium), sliced
100 gms gram flour
¼ tsp chilli powder
½ tsp turmeric
½ tsp baking powder
big pinch of salt
½ tsp ground cumin
1 long thin green chilli, deseeded and cut finely
1 small bunch of chopped coriander
Couple of glugs of lager
Sunflower oil for frying

Deep fry the bhajees in sunflower oil

 Method

Thinly slice the onion, half as whole rings, half as halved rings, drop into a large bowl.  Sift in the gram flour.  Add the rest of the dry ingredients and mix thoroughly.  Glug some lager in a little at a time and mix by hand, coating all of the onion with the sticky batter.  Don't let it get too wet.  Drink the rest of the beer.

Heat the oil over a high heat and quenelle the mixture into the pan.  The mixture makes about 6 and you should get 3 in the pan each time.

Open another beer and enjoy your bhajis!

Enjoy your bhajis hotter?

Leave the chilli seeds in, add another chilli and change the chilli powder to a hot chilli powder.
